How to Make Fig Preserve
A slow, steady method keeps the figs whole and creates a thick, amber syrup.
1. Prepare the figs
Wash the figs quickly and gently — just enough to remove dust. Pat dry. Trim only the stems.

Figs can be kept whole for preserves. Small and medium figs hold their shape beautifully. Very large figs can be left whole as well; they usually soften more in syrup and may break, but this is completely normal for the fruit. Keeping them whole gives the preserve its traditional look and texture.
2. Make the sugar syrup
Combine sugar + water in a wide pot. Boil 7–10 minutes.

Syrup test (room‑temperature plate method):
Drop syrup on a plate → it should form a tiny dome and slide slowly.

3. Add figs + lemon juice
Add the fruit gently. If the syrup crystallises for a moment — normal. Avoid vigorous stirring.

4. Cook 10–12 minutes

5. Cover & cool completely
Turn off heat, cover with a damp towel, and cool fully.
The preserve will still look liquid — this is normal. It thickens in the jar in 1–2 weeks.


6. Optional second boil
If you want a thicker syrup, reboil 5–7 minutes after full cooling.
7. Jar safely
Sterilise jars and lids. Add the cooled preserve to warm jars. Seal and store.
